Ingredients (Serves 3–4)
1 cup chopped carrots
1 cup chopped beans
1 cup cauliflower florets
½ cup green peas
1 capsicum, chopped
2 tbsp oil
1 tsp cumin seeds
1 onion, finely chopped
2 tomatoes, chopped
1 tsp ginger-garlic paste
½ tsp turmeric
1 tsp red chilli powder
1 tsp coriander powder
Salt to taste
2 tbsp chopped coriander
Instructions
Heat oil in a pan and add cumin seeds.
Add chopped onions and cook until golden.
Add ginger-garlic paste and sauté for 30 seconds.
Add tomatoes, turmeric, chilli powder, coriander powder, and salt. Cook until soft.
Add carrots, beans, cauliflower, peas, and capsicum. Mix well.
Cover and cook on low flame for 12–15 minutes, stirring occasionally.
Add fresh coriander and mix gently.
Serve hot with roti, paratha, or rice.
